Space Jam Chilli Chicken Traybake

Sweet, spicy and finger-lickin’ good.
This chilli chicken traybake will transport your taste buds to outer space. 

Serves: 4-6
Prep time: 10 minutes 
Cook time: 50 minutes
INGREDIENTS 
1 kg chicken drumsticks or bone-in thighs 
¼ cup Sweet Sting Space Jam, plus more to serve
2 cups jasmine rice
2 ½ cups chicken stock
2 cloves garlic, minced
1 red onion, cut into wedges
1 capsicum, cut into thick slices
sour cream or Greek yoghurt, to serve
handful of coriander leaves
METHOD
1.    Preheat your oven to 180°C fan bake. In a large bowl toss the chicken in the Sweet Sting Space Jam. 

2.    Place the rice, chicken stock and garlic in a large baking tray or casserole dish. Nestle the chicken, red onion and capsicum into the rice. Brush the chicken with any sauce remaining in the bowl and season with salt and pepper.

3.    Cover with a lid or foil and bake for 40 minutes. Uncover and cook for a further 10 minutes, or until the chicken is golden brown.

4.    Remove from the oven and finish with dollops of sour cream or Greek yoghurt and scatter with coriander leaves. Serve with extra Sweet Sting Space Jam on the side.
