Smoky Joe Pulled Pork Sliders

Smoky Joe adds a dash of smoke and fire to these saucy pulled pork sliders. Perfect to share with friends alongside a quality craft beer.
Serves: 12 sliders

Cook time: 2 ½ hours
INGREDIENTS
1 Tbsp paprika
1 Tbsp ground cumin
1 Tbsp onion powder
1 Tbsp garlic powder
1.2- 1.5 kg pork shoulder, skin and excess fat removed
2 cups apple juice
1 carrot, shredded
¼ red cabbage, shredded
1 cup coriander leaves, roughly chopped
⅓ cup Sweet Sting Hot Honey Mustard
1 Tbsp mayonnaise
½ cup Sweet Sting Smoky Joe
12 slider buns or rolls
2 Tbsp soft butter
¼ cup sliced gherkins
METHOD1.
1. Preheat your oven to 160°C fan bake. In a small bowl mix together paprika, cumin, onion powder, and garlic powder and season with salt and pepper.
2. Place the pork in a roasting dish, drizzle with olive oil and sprinkle over the spice mix.
3. Pour the apple juice around the pork, cover and place in the oven to bake for 2-2 ½ hours, or until the pork is tender.
4. For the slaw, combine Sweet Sting Hot Honey Mustard and mayonnaise, salt and pepper in a small bowl. Add the carrot, red cabbage, coriander and dressing in a large bowl and toss to combine. Refrigerate until needed.
5. Once the pork is tender, remove from the roasting dish, cover with foil and allow to rest for a minimum of 30 minutes before using forks to shred the meat. Reserve the liquid from the roasting dish.
6. Add Sweet Sting Smokey Joe to the shredded pork along with half of a cup of the reserved cooking liquid, adding more if needed, and toss to coat.
7. Slice and toast the slider buns. Spread with butter and assemble the sliders starting with the pulled pork, followed by the coleslaw and sliced gherkins. Serve and enjoy.
