2 Tbsp sweet sweet sting (squirts are more fun)
1 Pack Soft tortillas
1 block of halloumi cheese, sliced just right(not too thinly)
1 Avocado, halved and thinly sliced
2 Pickled onions, sliced in rounds
1 pack Baby spinach
1 Tbsp Chipotle Mayo
1 bunch Coriander
1 tsp Olive oil
Slice approx 5mm halloumi slices and lightly pat dry.
In a pan, heat 1/2 the oil and flash fry halloumi in batches until golden. Once the halloumi is cooked, drizzle generous amounts of @sweetsting making sure each piece of halloumi is coated, allow Sweet Sting to caramelise then turn off the heat.
In a separate pan, heat the remaining oil and quickly warm the Soft tortillas, turning each side until golden.
Now the best part, assemble your tortilla with sweet sting halloumi topped with baby spinach, pickled onions, avo, coriander, and your favorite smokey mayo.
