Sweet Sting Breakfast Muffin

2 Tbsp sweet sweet sting plus squirts at the end

500g pork mince

1 Tbsp fresh thyme, finely chopped

2 Tbsp fresh sage, finely chopped

1 pinch Salt and pepper

1 pack of English muffins

1 tsp of lime juice

2 Avocados

10 pieces mild cheese

10 eggs

1 Tbsp olive oil


  1. Mix herbs, salt and pepper and Sweet Sting hot honey in a medium bowl. Add pork mince and mix thoroughly, by hand is best!

  2. Shape into 10 balls and flatten each ball with the palm of your hand.

  3. Heat pan with oil until near smoking. Place patties in the pan and squish them thin as you want them the same dimension as the muffins. Cook for 3-4 minutes on each side, and add cheese to the top of each pattie in the final minutes of cooking so it's lovely and soft.

  4. Fry eggs, start frying at the same time as when you flip your patties.

  5. Toast muffins halves in the toaster and thinly slice the avo.

  6. Stack the muffins with avo, sage and pork patty and your runny egg avo.

To serve, lusciously drizzle each muffin with Sweet Sting hot honey!
